<p>In business since 2011, Paul Rydza conceived the store after 15 years of searching and praying for just one place to find those special ingredients for his experimental home recipes.  Many times it took 4 or 5 trips to different stores to find different spices and herbs and even then, many ingredients he wanted were nowhere to be found locally in South Florida.  The internet is great, but sometimes he needed that perfect ingredient ASAP for a last minute party that was spontaneously arranged.  Preparing Thanksgiving Dinner for family and friends over the past 10 years, Paul’s come to realize each holiday how inseparably his passion for food and faith were intertwined; on a firm foundation of love for food and others he continues to build a comforting store where people come in as strangers, but walk out as friends.</p>

<p>Why’s our food so good?  We use the best ingredients available, that’s delivered daily and prepared on-site for all our homemade salsa, sauces and sides. Plus, we really care if you like it. We make your meal however you want it, bring it out to you and bring it back if it’s not perfect. We’re cool like that.</p>
<p>We also have vegetarian, low-carb and low-fat options. But we’ll be the first to tell you that a mound of sour cream on a low-carb wrap… still has a mound of sour cream. So keep it in check Madam Denial.</p>
<p>So, yeah. If you want delicious, freshly-prepared Mexican food with a precocious, often-offends attitude … then welcome. We like you already.</p>

Recently hired Executive Chef, Troy Bonghi worked for two months with French Quarter co-workers to develop dishes that evoked the New Orleans theme by drawing on the mellow flavors found in many Creole dishes.</p>
<p><img class="size-medium wp-image-1820 alignleft" style="margin-left: 5px; margin-right: 5px;" title="French Qtr. Chef" src="http://www.lasolaswff.com/wp-content/uploads/2013/03/French-Qtr.-Chef-e1363976875312-225x300.jpg" alt="" width="225" height="300" />Chef Bonghi began his career as a dishwasher in a Pennsylvania country club. While studying hotel and restaurant management at Pennsylvania State, Bonghi worked his way up from dishwasher to prep cook to chef’s assistant. Mentored by a wonderful Italian chef who prepared everything with love and time, Bonghi realized that cuisine was what interested him most. Transferring from the University of Pennsylvania, he then studied culinary arts at the Indiana University of Pennsylvania, then moved to Boca Raton to extern at the Boca Raton Resort Club.</p>
<p>From externship to Boca Country Club Executive Chef, restaurant Chef of 501 East, Shula Hotel Executive Chef and a Banquet Chef at the Boca Raton Resort and Club, Bonghi is drawing from all of his experiences to address the unique needs of the many food outlets at Mardi Gras Casino.</p>
<p>From the house made soups and fresh offerings at the weekly soup and salad bar, to the Signature crabcakes, you will be surprised and pleased with your meal. The buffets are a very popular treat for diners featuring Prime Rib and Fish ‘N Chips on Fridays, Seafood Buffet with Prime Rib on Saturdays, and an Italian buffet on Sundays. Live entertainment while dining is always a favorite on the weekends. Her training with French flavors took her on a journey to Germany where she became Executive Chef of a New Orleans style restaurant. She later welcomed the opportunity to move to South Florida, where she has been the Executive Chef at various restaurants in the area.</p>
